Real Conservera Anchovies

Anchovies are caught wild over a three month 'anchovy run' in the deep, cold waters of the Bay of Biscay, to the north of Cantabria. During this period the fish develop an extra layer of fat which contributes to the smooth richness of the final product. From the harbour fish are packed whole in salt and packed for slow natural fermentation. Two to three months later they are then cleaned and filleted by hand, before being canned with the finest olive oil.
