2019 Gorrondona Txakoli
The classic white of the Basque Country given a more serious edge thanks to organic viticulture, indigenous yeast ferments and a fearless wine maker. Gorrondona rides the same high acid line as the more commercial, slightly spritz Txakoli's that water the Basque tapas bars. In this instance the gentle spritz and relatively benign flavours are replaced by a genuine still white of white florals, citrus and a zing of briny-oyster salinity.
2017 Fredi Torres 'Classic' Priorat
Fredi Torres' Classic Priorat seemed like the perfect foil for Frank's slow roasted Sher Wagyu dish this week. Priorat is general is famed for it's intensity, concentration and but also finesse and that's exactly what you'll find here - generous dark fruit from Carignan lifted and given a firm backbone by high toned Garnacha. Serious red to pair with serious dishes!
