Darkness and salt...
A staple of the MoVida restaurants; our preferred aperitif with a few olives or a plump anchovy and the secret elixir of the waitstaff at knockoff drinks - Gabriela is a complex, round, delicious Manzanilla, full of bread and saline notes pinned to the palate by a surprisingly tight acid line. There are touches of the trademark Manzanilla chamomile scent, alongside lemon balm and a certain, old-world darkness that harks back to sherries of the pre-industrialised age.
Drink on a sunny day with the cricket on the TV. Seriously. It's the best.
