A lean, tight white made from traditional Basque varietals.
Doniene Gorrondona are one of a bunch of young Basque wineries who are elevating the classic, lean, dry, Txakoli style from the tourist fodder poured from great height in tiny bars along the lanes of San Sebastian into serious wine. Concentrating on organic farming, being careful with clonal and site selection and forgoing commercial yeasts. Although thankfully this doesn't prevent their wines from being seriously good in when consumed alongside huge helping of Pinxhos in rowdy atmospheres.
Gorrondona Txakoli is made from the traditional Basque varietals Hondurabi Zuri (85%) with little bits of Iskirita Zuri Hadia (15%). It’s handpicked and fermented with indigenous yeasts in stainless steel, kept on lees for six months before being racked, then put through a single course filter and bottled.
Gorrondona shows cut grass, fresh lime leaf and white floral aromatics, almost reminiscent of dry Clare Valley Riesling. The palate is lean and tight, driven by a citric acid that makes it an ideal match for the salt-laden dishes of the Basque Country.
