Made from Pedro Ximénez grapes, which are sun dried before being brought into the winery, this PX is fortified to 15% alcohol and aged for 5 years.
It’s a decadent sweet wine that’s brilliant with deserts and cheese but – in keeping with the house style of El Maestro Sierra – there's a fresh acidity here that ensures it’s never cloying.
