Aged in oak for over 25 years, Pedro Ximénez vinegar comes from a dedicated vinegar solara within the Ximénez-Spínola sherry bodega. Any sherry barrels that begin to show oxidative or acetic characters are plugged and transferred to the vinegar solera.
The vinegars are sold by the barrel before being bottled en rama (without clarification or manipulation) and hand-stamped with the name of the barrel’s new owner. We receive a very welcome allocation of a barrel each year!
